Sprouted Fig (The Smoothie Lover)
July 29, 2013
.

A big surprise waited in our garden when we arrived home after our trip to France.

The old cherry tree in the bottom of the garden was more red and black than green. From all the ripe cherries hanging on it.

I’m serious. All of the branches were heavy with fruit. And the funniest thing of them all: We didn’t even know cherries still grow on that tree. Silly, I know. The thing is that we moved in last spring (2012) and apparently we just didn’t notice the tree last summer. Well, we were in the US for almost the entire summer vacation after all, but still I can’t believe it. How did we miss all those pretty berries? My brother, mother and I looooovecherries. As in very very very much.

It didn’t take much time before Alex and I sat in the top of the tree eating berries. Mouth full and with red fingers we started collecting the berries and store them in big bowls. Did you see the picture I posted in Instagram? We literally picked a whole bucket full of cherries. And before that one we had already collected two other bowls.

I’m in heaven!

But not only the cherries were ready to eat. Our bushes with blackcurrant were one big black sea of small sour berries.

Needless to say I had to make something with all of these berries.

I’ve pitted four bags full of cherries and frozen them down. And one bag of blackcurrants. And eaten so many cherries I almost got a stomachache. Haha – that’s so me. When it comes to berries I’m unstoppable.

My breakfast? Skyr (a kind of yoghurt high in proteins) with cherries, blackcurrant and a homemade healthy chunky nuts and sesame granola. Perfect!
I really like this granola. I love the big lumps and the flavor of both sesame, almonds and hazelnuts. And as a bonus it is relatively low-sugar and contains a lot of healthy fats from the nuts and seeds.

Chunky Granola w/ nuts and sesame

About 3 cups

·      ½ cup almonds

·      ½ cup hazelnuts

·      1 ½ cup old-fashioned oatmeal

·      4 tbsp. sesame seeds

·      2 tbsp. apple sauce

·      ¼ cup water

·      2 tbsp. maple syrup

·      1 ½ tbsp. honey

·      1 tbsp. coconut oil

Preheat oven to 160°C / 320°F.

Chop the almonds and hazelnuts coarsely.

In a big bowl mix together all dry ingredients. Add in the apple sauce and stir to combine.

Mix water, maple syrup, honey and coconut oil in a small pot and bring ot to the boil over medium-high heat. Boil for 4 mintes stirring from time to time. Pour the mixture over the cereal and mix very well.

Spread the granola out on a baking sheet with a piece of parchment paper and bake for half an hour stirring every 10 minutes to break up bigger lumps.

Cool down and store in an airtight container.

Enjoy!

Yum, the granola sounds good! Cherries are so good, I always do the classic and have them on top of ice cream :)

  2. Aw, lucky you, all cherries in my cherry tree were polished off in like three days… such a shame there aren’t any left :'( Anyway, this granola looks fantastic… I wish it was tomorrow’s breakfast ;-)

      Haha, you’re so sweet :)
And what a shame about the cherries. I think I have a totally different problem – we won’t be able to eat them all before they rot :( Wish I could send you some – haha

  3. […] Remember I told about our cherry tree and how it was packed with cherries this summer? We had so many cherries I had to freeze a lot of them. For these lovely yoghurt cups I used a bag of those cherries. It was like eating summer again. […]
