It seems like everybody are totally obsessed with three things at the moment:

Gluten-free eating, single-serving eats and mug cakes.

I mean, mug cakes are everywhere. Pinterest, foodgawker, tastespotting etc. etc.

That’s absolutely lovely. That means delicious and easy food to share with nobody but yourself. Haha. Wonderful. It mostly also means healthy food – like this mug cake. A yummy, gooey and not least easy mug cake with banana and cocoa. So good!

Right now, I’m having the final examination in elementary school (we call it another thing, and I don’t really know what it corresponds to – I’m 16, that might give you an idea). It’s only the written examinations though. The verbal ones are in June.
That means, that I finish school very early some of the days this week. Whoopee. Time for doing exactly what I want. Being together with friends, dancing ballet, running, cooking, photographing… hooray!

Today it’s raining cats and dogs. So what did I do after a little run? I made a cake. A healthy, gooey, extremely delicious mug cake, which has no added sugar and can be ready in no time (if you have a microwave, which we don’t – can we pleeease have one soon mom and dad?)

Healthy Banana Chocolate Mug Cake

Prep Time: 5 minutes

Cook Time: 12 minutes

Yield: 1 cake

Ingredients

  • 1 small ripe banana
  • 2 tbsp. unsweetened cocoa powder
  • 2 tbsp. milk (can be dairy free)
  • 3 tbsp. flour of chioce (I used oat for this recipe, but any will work)
  • 1/8 tsp baking powder
  • 1 tsp nut butter of chioce

Instructions

  1. Preheat oven to 200°C / 390°F
  2. In a food processor mash the banana. Add all of the other ingredients and pulse to combine.
  3. Grease an oven proof mug and pour the batter into it.
  4. Bake for approx. 12 minutes

Ps. Right now I’m shooting photos with a small digital camera. I have a small Sony Cybershot DSC-WX9, which is an amazing camera, but right now I can’t really improve my photography any more with such a small camera. So here is what I’ve decided to do…

*drum roll*

I’m going to buy the new DSLR camera from Nikon – Nikon D3200. Whoopee! Looking so much forward to that. It will be released mid May – THIS MONTH. In the meantime I’ve been reading A LOT about DSLR photography on the internet so I’m totally ready to start shooting with a DSLR. I can’t wait

    Thank you for the recipe but your English… OMG!

    • What is that for an awful comment to leave. I have absolutely no idea where in the world your are from, but considered this comment, you must be from somewhere where they talk English. You should be happy that other people around the world do their best and work their asses of to learn English. Without those people you would’t be able to communicate at all. WE are the ones who make sure the world works!
      I think it is an awful thing to say to a 16-year-old child, who really works on her English. We all grow. We all develop. We all get better each day. Such a comment only takes away all hope and lust for trying. This post is two and a half year old. I’ve changed a lot since. And if you think the language is too bad to read, please stay away!

    Hey I just came across your page and am about to try your recipe – but just wanted to say I’m sorry to see you got a negative comment about your English … Your ‘About’ blurb says you’re Danish so I didn’t expect it to be perfect, but you come across as being chatty and friendly, and your ideas are perfectly clear, which is the whole point of communication.     This was quite good! Thanks for sharing. I used 1T wheat flour and 2T plain oats for the flour, and I put in 1T peanut butter (I forgot that it was only supposed to be 1tsp) along with about 1/3tsp of normal butter.. just because I wanted to put some in. And I only had half of a banana, so I did put in a scant T of powdered sugar to cut through any bitterness from the cocoa. 2 minutes on high in the microwave, et voilà!
