I did it! Today was the day. I reached my goal – 10 kilometers. Wuhuu! I’m so happy. Actually I did 10 and a half (yeah – that half is important). Oh and I did it in 56 minutes, which is quite good (but not fantastic). My dad and I talk a bout participating in a race. My dad is quite good at running, so 10 kilometers isn’t that much for him ;) Now we just have to find a race. Looking forward to it!
But well, running hasn’t really got a lot to do with this post. Well, yes – in some way it does since I had this lovely granola on top of yoghurt as a post-run snack :)
I’ve been wanting to make a granola with chocolate for weeks. I can’t help it. I’m obsessed with chocolate.
Also I can’t live without my granola. And it has to be the homemade kind, since I’m very picky when it comes to granolas. I want it very crispy and not too sweet.
I believe that a healthy and filling breakfast is important. I always have yoghurt or quart with fruit and muesli. Oh – and a big cup of tea. Tea is to me what coffee is to others. I wont wake up unless I’ve had a big cup.
This granola is great for breakfast. Healthy and filling. And on top of that: chocolate
50 g. dark chocolate chips (I dare to call this granola healthy since there isn't that much chocolate compared to how much granola this makes)
2 tbsp. apple sauce
1/4 cup (0,5 dl) water
2 tbsp. coconut sugar
1 tbsp honey
Preheat oven to 175°C / 350°F
In a big bowl mix together oats, rice crispies and cocoa powder. Chop the almonds and mix in almonds and chocolate chips. Stir in the applesauce
In a small pot mix together the water, coconut sugar and honey. Bring to the boil. Boil for 3 minutes stirring from time to time. Pour the water mixture over the cereals and stir very well.
Spread the granola out on a baking sheet lined with non stick paper and bake in the oven for half and hour stirring every 8-10 minutes to break up bigger lumps.
It can be quite hard to see when the granola is done due to the brown color. It's done when nothings wet anymore (not on the inside of the bigger lumps either) but not totally crispy. It'll turn crispier once cold.
Allow to cool down completely before transferring to an air tight container.
