Two weeks to December. Two weeks! I can’t wait. I remember when I was little my mom used to make a strip of paper with numbers on as a countdown to December. Everyday I cut off a number all the way to the 1st where I could finally start opening my advent calendar. A count down to a count down.

This year I look almost as much forward to December as I did as a child. Because last Christmas was pretty much ruined by all Danish high school students’ biggest fear – a huge written project monster called SRP.

Der er kun to uger til december! TO UGER! Jeg kan slet ikke få mine hænder ned af bare glæde. Da jeg var mindre, lavede min mor altid en lang papirslip med numre på til mig. Hver dag op til december klippede jeg et nummer af – helt til den første, hvorfra jeg så kunne starte på julekalenderen. En nedtælling til en nedtælling, haha.

I år glæder jeg mig næsten lige så meget, som jeg gjorde som et barn. Sidste jul blev nemlig ødelagt af gymnasieelevernes største frygt – SRP. Men i år er den væk, så nu skal der julehygges.

I do not make a long paper strip any more. Now I count down with cookies. Christmas cookies have always been my favourite kind of sweet baked good. What a shame you can only have them once a year. In Denmark we have a big tradition for Christmas cookies. There are so many different from all around the country. Finish loaves, vanilla wreaths, pepper nuts, Jewish cakes, Funen pepper nuts, klejner, many more and these: brown cakes (or Danish ginger cookies, to use the right translation).

Jeg laver ikke en lang papirstrip mere. Nej, nu tæller jeg ned med julekager. Julesmåkager har altid været min yndlings form for kager. Der er bare noget over det lækre små, sprøde, krydrede kager, der kommer i en størrelse, der er til at overskue (så man kan spise ekstra mange (: ).

I love them all but let’s be real, all the white sugar, white flour and loads of butter aren’t the healthiest things in the world. I had to make a healthy version of ginger cookies.

None of the people, who tasted these, could taste they were healthy at all, the entire batch was gone in two days AND I’ve had multiple enquiries for the recipe already. Definitely a winner.

Jeg måtte lave en sundere form for især brunkager, der er en af favoritterne. For let’s be real, al den meget hvid sukker, sirup, hvid mel og overdoser af smør. Jeg måtte lave en sundere version. Resultatet er jeg mere end tilfreds med. Ingen af mine søde smagstestere kunne smage, disse er langt sundere, hele portionen var væk på to dage og opskriften er allerede blevet efterspurgt en del gange. Skønt!

Healthy Danish Ginger Cookies

Prep Time: 10 minutes

Cook Time: 7 minutes

Yield: 2 baking sheets

Healthy, gluten free, low carb, low sugar spiced Christmas cookies. Can be made vegan.

Ingredients

  • 65 g. salted grass fed butter (sub coconut oil for vegan)
  • 55 g. taste neutral coconut oil
  • ¼ cup maple syrup
  • 1/3 cup (80 mL) sukrin gold or coconut sugar
  • 1 cup (240mL) buckwheat flour
  • ½ cup (120mL) rice flour
  • ½ cup (120mL) almond flour
  • Spices: 1 ½ tsp. cinnamon, 1 tsp. ground cloves, ½ tsp. cardamom, ½ tsp. ground ginger
  • 1 tbsp. grated orange peel (or sukat)
  • 1 tsp. baking soda
  • ½ cup (120mL) almonds

Instructions

  1. Beat together butter, coconut oil, syrup and sukrin gold or coconut sugar until fluffy.
  2. In a separate bowl mix together the rest of the ingredients except the almonds.
  3. Chop the almonds coarsely and add them to the flour mix.
  4. Mix everything together very well (I used a kitchen machine). Make a long sausage from the dough, wrap it up in plastic foil and let it rest in the fridge for minimum 3 hours or 1 hour in the freezer (the longer the better – it lets the spices blend nicely). Or you can store the dough in the freezer the entire month and have ready freshly baked cookies in no time anytime – that’s what we do with Danish ginger cookies.
  5. Heat oven to 200°C / 390°F. Take out the dough and slice it thinly ¼ cm or 0.1 inch. place the slices on a baking sheet with non stick paper and bake for 5-7 minutes. Make sure to look at them often. They quickly burn. They should be golden brown but not hard – they harden up as they cool.
  6. Store in a cookie box.

    I have everything in my pantry except the neutral coconut oil (I only have coconut oil that is un-refined and definitely tastes of coconut). Do you think it will be overpowering?
