I’m in a love-hate relationship with running at the moment (I think every runner can relate). I usually love running, but it is just not nice when there is two meters of snow and it’s minus 7° outside (19°F FIY) and you are freezing your butt off and your feet slip with every step you take. On times like these I wish I had a membership to the gym (I don’t have one, since I’d much rather go for a run and I’m used to doing strength training without any equipment). I just came home from a run though. I’ve never run that slowly before…

With all this snow I start longing for spring. For longer days and warmer weather and roads you can run on without fear of falling all the time. I made this salad yesterday – a little mix between spring and winter. To bring me closer to that lovely season, I’m longing for.

I’ve always loved vegetarian “steaks” and patties. Black bean burger, lentil patties, quinoa burgers. Yum! Just the thought of it makes my mouth water.

These steaks are very delicious: a little spicy with a hint of the Oreintal kitchen.

Red Lentil Patties

Serves: 3
Ingredients
  • 1 cup (240mL) lentils
  • 2 cups (480mL) water
  • 2 garlic cloves
  • 2 small onions
  • ½ tsp. paprika
  • ¼ tsp. dried cilantro
  • Salt and pepper
  • 2 tbsp. oats
  • 1 egg
  • Olive oil
Instructions
  1. Boil the lentils in the water according to what the package says.
  2. Once done transfer to a food processor. Add in the garlic, onions, paprika, cilantro, salt, pepper and oats and pulse until well combined. Then blend in the egg.
  3. Heat up a frying pan and add on the oil. If using a non-stick pan you'll have to add quite a lot, since the patties don't have any fat in them themselves.
  4. Fry on medium-low heat for 5-8 minutes on each side.
  5. Serve warm on a bed of spinach, sprinkle on pomegranate and drizzle with a yoghurt-tahini dressing (ex ½ cup yoghurt, 1 tbsp. tahini, 1 tbsp. lemon juice, salt and pepper).

  2. These look great! I actually just picked up a huge bag of lentils that were on sale so I’m definitely going to test out this recipe!

    I totally feel you about the whole running thing. I’m used to doing strength without any equipment as well and never go to the gym anymore. Plus, I love running outdoors…but I also hate the cold, so it’s tough to get myself to run in the winter. I’ll admit it, I don’t more than I do during the winter time haha, but nothing beats good springtime running weather :)

    Yum!! Question: are you a vegetarian? I’m not, but I do love black bean/quinoa burgers! In fact, I made black bean burgers tonight… recipe will be up soon! :) I’ve never tried lentils before!

    Hi!! I have just discovered your blog thanks to these delicious patties. I was searching something for my red lentils, and this is perfect. I’ve done similar things, but with chickpeas and carrot.

    I now have a gym, but I miss running and working outdoor, you’re right, more fun!! But gym is so “comfortable”. Of course, where I live, not so cold, no snow. I wouldn’t be able to go running, I think!!

    These look so amazing!! “Vegetarian steaks”… so cute!! And I’m sorry about running!! That stinks that it’s so cold and slippery… maybe you could do some yoga/Pilaties inside to mix things up!! Haha I love ‘yogalties’!!

Oh that sounds really tough – the weather has been beautiful here, I wish I could package up some of our sunshine and send it over to you! :) On another note, these lentil patties look great – and grain free too – WIN! I’ve made lentil patties once or twice before but used lots of flour in mine so will have to try these out for a healthier, lighter “steak”. Thanks!

  8. Oh my Josefine! You are DEDICATED. I love running too, but I admit, I am a fair-weather runner. You go girl! I think these look amazing!!! I love that they are spicy with a hint of Oriental kitchen – love that flavor combo!

    Yeah running in the cold feels pretty terrible :–( But at least it is better than having to run in a treadmill. Oh, how I hate those!! I can’t wait for spring to come, I really can’t!
    These patties look so delicious! I love lentils so I guess I’ll ahve to give these a go soon :D
